Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries pureed

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes, then remove from the oven and let cool.
Make the filling
  1. In a mixing bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract and mix well.
  2. Add eggs one at a time, mixing well after each addition. Finally, fold in the pureed strawberries.
Bake the bars
  1. Pour the filling over the cooled crust and spread evenly. Bake for 25 minutes or until the center is set.
  2. Remove from the oven and let cool completely. Refrigerate for at least 2 hours before cutting into bars.

Notes

For best results, use fresh strawberries and allow the bars to chill overnight for optimal flavor and texture.
