Ingredients
  

For the Cheesecake Filling
  • 8 oz Cream Cheese softened to room temperature
  • 1/2 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1/4 cup Sour Cream
For the Strawberry Layer
  • 1 cup Fresh Strawberries finely chopped
  • 1/4 cup Strawberry Jam
For the Chocolate Coating
  • 1 cup Dark Chocolate Chips melted
  • 1 tbsp Coconut Oil for melting

Method
 

Prepare the Crust
  1. In a mixing bowl, combine crushed graham crackers, melted butter, and a touch of sugar. Stir until well mixed and crumbly, then press firmly into mini muffin tins.
Make the Filling
  1. In another bowl, blend cream cheese, powdered sugar, vanilla extract, and sour cream until smooth and creamy. Taste it; you want it rich but not too sweet!
Fill the Crusts
  1. Spoon the cheesecake filling into each crust, filling them about ¾ full. Gently tap the muffin tin on the counter to remove any air bubbles for a smooth finish.
Chill
  1. Place the muffin tin in the refrigerator for at least 4 hours or overnight to set the filling.
Prepare for Topping
  1. Once chilled, melt white chocolate in a microwave-safe bowl until smooth, stirring every 30 seconds to avoid burning.
Coat with Chocolate
  1. Dip each cheesecake bite into the melted white chocolate to create a delicious outer shell. Let any excess chocolate drip off before placing them back on parchment paper.
Decorate
  1. While the chocolate is still warm, sprinkle with colorful sprinkles or finely chopped strawberries for that festive Easter touch!
