Ingredients
Method
Prepare the Crust
- In a mixing bowl, combine crushed graham crackers, melted butter, and a touch of sugar. Stir until well mixed and crumbly, then press firmly into mini muffin tins.
Make the Filling
- In another bowl, blend cream cheese, powdered sugar, vanilla extract, and sour cream until smooth and creamy. Taste it; you want it rich but not too sweet!
Fill the Crusts
- Spoon the cheesecake filling into each crust, filling them about ¾ full. Gently tap the muffin tin on the counter to remove any air bubbles for a smooth finish.
Chill
- Place the muffin tin in the refrigerator for at least 4 hours or overnight to set the filling.
Prepare for Topping
- Once chilled, melt white chocolate in a microwave-safe bowl until smooth, stirring every 30 seconds to avoid burning.
Coat with Chocolate
- Dip each cheesecake bite into the melted white chocolate to create a delicious outer shell. Let any excess chocolate drip off before placing them back on parchment paper.
Decorate
- While the chocolate is still warm, sprinkle with colorful sprinkles or finely chopped strawberries for that festive Easter touch!
Notes
Optional: Drizzle with strawberry sauce for an extra burst of flavor!
