Ingredients
  

Shortcake
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream plus extra for brushing
  • 1 tsp rosewater
Topping
  • 2 cups fresh strawberries sliced
  • 1 tbsp granulated sugar for strawberries
  • 1 cup heavy cream for whipped cream
  • 2 tbsp powdered sugar for whipped cream
  • 1 tsp rosewater for whipped cream

Method
 

Prepare the Shortcake
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and rosewater until just combined.
  5. Turn the dough onto a floured surface and gently knead it a few times. Pat into a 1-inch thick rectangle.
  6. Cut into squares or rounds and place on the prepared baking sheet.
  7. Brush the tops with extra heavy cream and bake for 15-20 minutes or until golden brown.
Prepare the Topping
  1. In a bowl, combine sliced strawberries with sugar and let sit for 10 minutes.
  2. In another bowl, whip the heavy cream with powdered sugar and rosewater until soft peaks form.
Assemble the Shortcake
  1. Split the shortcakes in half and layer with strawberries and whipped cream.
  2. Top with the other half of the shortcake and serve immediately.

Notes

For a more intense rose flavor, increase the amount of rosewater in the whipped cream.
