Ingredients
  

Shortcake Biscuits
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 3/4 cup heavy cream
Strawberry Filling
  • 1 quart fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar for macerating
Whipped Cream
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

Prepare the Strawberries
  1. In a bowl, combine sliced strawberries with granulated sugar. Let sit for 15 minutes to macerate.
Make the Shortcake Biscuits
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined.
  5. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round.
  6. Cut into rounds and place on a baking sheet. Bake for 12-15 minutes until golden.
Prepare the Whipped Cream
  1. In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble the Shortcakes
  1. Slice the baked shortcake biscuits in half.
  2. Layer the bottom half with macerated strawberries and a generous dollop of whipped cream.
  3. Top with the other half of the biscuit and add more strawberries and whipped cream on top.

Notes

For best results, serve immediately after assembling to prevent the biscuits from becoming soggy.
