Ingredients
  

Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
Strawberry Filling
  • 2 cups fresh strawberries sliced
  • 1/4 cup granulated sugar
Whipped Cream
  • 1 cup heavy cream chilled
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add softened butter, eggs, vanilla extract, and buttermilk. Mix until smooth and well combined.
  4. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Strawberry Filling
  1. In a bowl, combine sliced strawberries and granulated sugar. Let sit for 15 minutes to release juices.
Whipped Cream
  1. In a mixing bowl, beat the chilled heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assembly
  1. Once the cake is completely cool, slice it in half horizontally.
  2. Spread half of the whipped cream on the bottom layer, top with half of the strawberries.
  3. Place the top layer of the cake on and repeat with the remaining whipped cream and strawberries.
  4. Serve immediately or refrigerate until ready to serve.

Notes

For best results, use fresh, ripe strawberries and serve the cake the same day it's made.
