Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts Grilled and sliced
Taco Assembly
  • 8 small corn tortillas Warmed
  • 1 cup shredded cabbage For topping
  • 1 avocado sliced For topping
  • 1/4 cup fresh cilantro Chopped, for garnish
Street Corn Topping
  • 2 cups corn kernels Fresh or frozen
  • 1/4 cup mayonnaise For creaminess
  • 1/4 cup cotija cheese Crumbled
  • 1 tablespoon lime juice Freshly squeezed
  • 1 teaspoon chili powder For flavor
  • 1 clove garlic Minced

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest before slicing.
Make the Street Corn Topping
  1. In a skillet over medium heat, add the corn and cook until slightly charred, about 5-7 minutes.
  2. In a mixing bowl, combine the cooked corn, mayonnaise, cotija cheese, lime juice, chili powder, and minced garlic. Mix well.
Assemble the Tacos
  1. Warm the corn tortillas on the grill or in a skillet.
  2. Layer sliced grilled chicken, street corn topping, shredded cabbage, and avocado on each tortilla.
  3. Garnish with fresh cilantro and serve immediately.
