  • 2 cups sweet corn fresh or frozen
  • 1 cup cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded cheese Mexican blend or cotija
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons cilantro chopped, for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sweet corn, cream cheese, sour cream, shredded cheese, lime juice, chili powder, garlic powder, cumin, salt, and black pepper.
  3. Mix until well combined and creamy.
  4. Transfer the mixture to a baking dish and spread evenly.
  5. Bake in the preheated oven for 20 minutes or until bubbly and golden on top.
  6. Remove from the oven and let cool slightly.
  7. Garnish with chopped cilantro before serving.

Notes

Serve with tortilla chips, crackers, or fresh vegetables for dipping.
