Ingredients
  

Pasta and Corn
  • 8 oz pasta cooked and cooled
  • 2 cups sweet corn fresh or canned
  • 1 cup cherry tomatoes halved
  • 1 cup red onion finely chopped
  • 1/2 cup cilantro chopped
Dressing
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
Toppings
  • 1/4 cup crumbled feta cheese
  • 1 avocado sliced

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, sweet corn, cherry tomatoes, red onion, and cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper.
Combine
  1. Pour the dressing over the pasta mixture and toss to combine well.
Serve
  1. Top with crumbled feta cheese and sliced avocado before serving.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 2 days. Adjust seasoning to taste.
