Ingredients
  

Watermelon Jello Base
  • 4 cups watermelon juice freshly blended
  • 1 cup water boiling
  • 1 package gelatin powder unflavored
  • 1/4 cup sugar optional, adjust to taste
  • 1 tablespoon lemon juice freshly squeezed
Garnish
  • 1 cup cubed watermelon for serving
  • 1/4 cup mint leaves for garnish

Method
 

Prepare Watermelon Juice
  1. Blend fresh watermelon chunks in a blender until smooth. Strain through a fine mesh sieve to remove pulp, yielding about 4 cups of watermelon juice.
Dissolve Gelatin
  1. In a mixing bowl, combine boiling water and gelatin powder. Stir until completely dissolved.
Mix Ingredients
  1. Add the watermelon juice, sugar (if using), and lemon juice to the gelatin mixture. Whisk until well combined.
Set the Jello
  1. Pour the mixture into a jello mold or individual serving cups. Refrigerate for at least 4 hours or until set.
Serve
  1. Once set, unmold the jello or serve directly from cups. Garnish with cubed watermelon and mint leaves before serving.

Notes

For added flavor, consider mixing in other fruits like strawberries or blueberries before setting the jello.
