Ingredients
  

Vegetables and Fruits
  • 2 cups cucumber peeled and chopped
  • 2 cups honeydew melon peeled and chopped
  • 1 cup ripe tomatoes chopped
  • 1 small red onion chopped
  • 1 clove garlic minced
Liquids and Seasonings
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 1/4 cup fresh mint leaves for garnish
  • 1/4 cup croutons optional

Method
 

Preparation
  1. In a blender, combine the cucumber, honeydew melon, tomatoes, red onion, and garlic.
  2. Add the vegetable broth, olive oil, lime juice, salt, and black pepper to the blender.
  3. Blend until smooth and creamy.
  4. Taste and adjust seasoning if necessary.
Chilling
  1. Transfer the gazpacho to a mixing bowl and refrigerate for at least 1 hour to chill.
Serving
  1. Serve chilled, garnished with fresh mint leaves and croutons if desired.

Notes

This gazpacho is best served cold and can be made a day in advance for enhanced flavors.
