Method
Prepare the filling
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, salt, and black pepper. Mix until well combined.
Stuff the blossoms
- Gently open each zucchini blossom and fill it with about 1 tablespoon of the ricotta mixture. Twist the ends to seal.
Make the batter
- In another bowl, whisk together flour, baking powder, salt, and cold sparkling water until smooth.
Fry the blossoms
- Heat vegetable oil in a frying pan over medium heat. Dip each stuffed blossom into the batter, allowing excess to drip off, then carefully place in the hot oil.
- Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
Serve
- Serve warm, optionally with a squeeze of lemon juice or a dipping sauce.
