Ingredients
  

Filling
  • 1 cup Ricotta cheese Fresh
  • 1/4 cup Parmesan cheese Grated
  • 1 tablespoon Fresh basil Chopped
  • 1 teaspoon Salt
  • 1/4 teaspoon Black pepper
Batter
  • 1 cup All-purpose flour
  • 1 cup Cold sparkling water
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
Zucchini Blossoms
  • 12 pieces Zucchini blossoms Fresh, cleaned and stems removed
For frying
  • 2 cups Vegetable oil For frying

Method
 

Prepare the filling
  1. In a mixing bowl, combine ricotta cheese, Parmesan cheese, basil, salt, and black pepper. Mix until well combined.
Stuff the blossoms
  1. Gently open each zucchini blossom and fill it with about 1 tablespoon of the ricotta mixture. Twist the ends to seal.
Make the batter
  1. In another bowl, whisk together flour, baking powder, salt, and cold sparkling water until smooth.
Fry the blossoms
  1. Heat vegetable oil in a frying pan over medium heat. Dip each stuffed blossom into the batter, allowing excess to drip off, then carefully place in the hot oil.
  2. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
Serve
  1. Serve warm, optionally with a squeeze of lemon juice or a dipping sauce.

Notes

Ensure the zucchini blossoms are fresh and free of any dirt or insects before stuffing.
