Ingredients
  

Fritters
  • 2 medium zucchini grated
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley chopped
  • 1/4 cup green onions chopped
  • 1/2 cup feta cheese crumbled
  • 1 cup vegetable oil for frying
Pitas and Toppings
  • 4 pieces pita bread halved
  • 1 cup Greek yogurt for serving
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion thinly sliced

Method
 

Prepare the Fritters
  1. Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and let it sit for 10 minutes to draw out moisture.
  2. After 10 minutes, squeeze out excess moisture from the zucchini using paper towels.
  3. In the same bowl, add flour, egg, baking powder, black pepper, parsley, green onions, and feta cheese. Mix until combined.
Cook the Fritters
  1. Heat vegetable oil in a skillet over medium heat.
  2. Scoop about 1/4 cup of the mixture into the skillet for each fritter. Flatten slightly and cook for 3-4 minutes on each side until golden brown.
  3. Remove fritters and place them on paper towels to absorb excess oil.
Assemble the Pitas
  1. Stuff each pita half with 2-3 fritters.
  2. Top with Greek yogurt, cherry tomatoes, cucumber, and red onion.
  3. Serve warm and enjoy!

Notes

These fritters can be made ahead of time and reheated in the oven for a crispy texture.
