  • 2 cups cooked ham, diced
  • 1 medium onion, finely chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Soak the dried navy beans overnight in water.
  2. Dice the ham and chop the vegetables: onion, carrots, celery, and garlic.
  3. In a crockpot, combine soaked beans (drained), ham, onion, carrots, celery, garlic, chicken broth, bay leaves, thyme, salt, and pepper. Stir well.
  4. Cover and cook on low for 6 to 8 hours until beans are tender.
  5. Remove bay leaves before serving. Adjust seasoning as needed.
