- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 cups all-purpose flour
- 1/2 cup crushed pineapple (drained)
- 1/2 cup shredded coconut
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in melted coconut oil and both sugars until well combined. Add eggs one at a time, mixing well.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually fold this mixture into the wet ingredients.
- Gently fold in crushed pineapple and shredded coconut until just combined.
- Pour the batter into the prepared loaf pan and bake for 60–70 minutes, or until a toothpick inserted comes out clean. Let cool before slicing.
