- 1 cup pomegranate seeds
- 1 cup roasted sweet potatoes (cubed)
- 1/2 cup red onion (thinly sliced)
- 1/2 cup feta cheese (crumbled)
- 1/3 cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Peel and dice sweet potatoes into cubes. Toss with olive oil, salt, and pepper; spread on a baking sheet.
- Roast sweet potatoes for about 25 minutes until tender and golden brown, flipping halfway through.
- In a large mixing bowl, add mixed greens as the base.
- Once roasted, let sweet potatoes cool slightly before adding them along with pomegranate seeds, red onion slices, and crumbled feta cheese on top of the greens.
- In a small jar or bowl, combine olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Whisk or shake until well combined.
- Drizzle vinaigrette over the salad just before serving. Toss gently to combine and enjoy!
